Do you take the almond to a powder, or do you preserve some of the texture of the nuts?

To a powder.

And I looked for high-quality almonds. That´s the same with hazelnuts, if you compare hazelnuts from Piedmont with hazelnuts from ordinary supermarkets. What a difference!
