Today we had had corned beef hash and poached eggs for Breakfast. Carollee fixes Breakfast nearly every Sunday that we’re at home. We also had a tall latté for me and a capuccino for Carollee. The poached eggs were topped with chervil and coriander. The corned beef hash was cooked on a bed of onions. Carollee puts salt and pepper on her eggs; I don’t.
Please tell the hash wasn’t from a can, even if you have to lie.
Perhaps he was inspired by my blog post.

Indeed, welcome back, Mr. Krueger. I LOVE corned beef hash, and growing up it was always from a can. I can live with that.
No pepper on the eggs (I can understand maybe not salt)?? But no pepper. I have to confess to over-peppering, I think. And brown butter cooked. Yum.

Now that I think about it, I do not think we ever ate breakfast at [your] home in Santa Fe, I always wanted to go out for breakfast. I think I like the chile better than you do for breakfast! However, that being said, I do recall you were kind enough to head out early a few times, even through the snow, to get bagels for us, and you always made great coffeee. I am sure Carollee’s breakfast would be something special! Love to you both.

Corned beef hash is something I make every weekend for guests up at the lake, especially during
Grouse hunting season. I place it in the oven around 11pm before we go to bed and cook it long and slow and in the morning, the whole cabin smells so good that I get out of bed early. We head out for an early birding session and then head back for breakfast.
Uh, you think you can get away with just this??? This tease demands a recipe! What do you put in the oven? The brisket? You see how vague it all is???
