3 spanky Fevre's

A week away with the in laws where we soaked up some sun, ate plenty of seafood and downed a few very tasty Chablis.


  • 2001 Domaine William Fèvre Chablis Grand Cru Bougros Cote de Bouguerots - France, Burgundy, Chablis, Chablis Grand Cru (1/19/2012)
    5 years ago I thought that this wine had well and truly it’s peak, I was wrong as tonight’s bottle is the best that this has looked since it’s release. It has aromas of honey, slate, paw paw and guava. In the mouth the is more pronounced minerality than I have noted previously along with a big squeeze of lemon juice. It is rich and textured with good precision and excellent length of flavour.
  • 2005 Domaine William Fèvre Chablis 1er Cru Les Vaillons - France, Burgundy, Chablis, Chablis 1er Cru (1/19/2012)
    Quite reductive at first but breathes up beautifully. It is fresh as a daisy with a pale colour tinged with iridescent green hues. There are scents of mint and flint as well as some candied pear and cumquat. It is fine, precise and piercing in the mouth with a fabulous minerally spine.

    Simply fabulous Chablis in a great place with plenty left under the hood ( barring premox). Cool, rocky, delineated, floral, this is a multifaceted wine that has lovely poise and balance. It is sharp but viscous with good volume and super cut.

Great to hear they’re all fine. I’d have previously cellared these much longer, but times have changed and my Fevre’s rarely make it ten years anymore.

Had any '08 Fevres (specifically Clos?).

Bought a case and I haven’t touched any yet…

I won’t buy upper level Fevre anymore, but one strategy has been to buy the lower and mid levels for quick drinking. Just finishing a stash of the 2008 straight fourchame which is really quite delicious now. I’d take a flier as the wines may not have closed up yet.

I had the 2008 Clos last summer. It was light in color and had knife like precision, stoney minerals, green citrus fruit with a finish that went on and on. I could taste this wine the following day… It would be interesting to see where this wine is now.

Haven’t had the Fevre 08 ‘Les Clos’ for a little while Paul, I’ll pull one out and have a look in the next few weeks. The 08 Raveneau, Bessin and Droin wines that I’ve had of late have been drinking very well.

Have a 2006 Fevre Vaulorent ready to open. My history with oxidized Fevres from 2000, 2002 and 2004 is miserable. Hopefully these 2006 will turn out well.
