Campo grande has a variety of sales with different free items and 20% off; I was able to stock up on a bunch of secreto, outside skirt steak, pork loins and got some free charcuterie.
Yeah we just made the secreto yesterday and it was phenomenal. I really like the pork loin and outside skirt steak for weeknight meals though. The sale is great for stocking up!
Iāve used the skirt to slice for Sichuan stir fries (works with any of the fattier cuts) and the result is spectacular. Not sure Iāve ever just grilled the thing because the best thing about this pork is keeping it rare and rosy red in the middle, tough to do with a skirt. The secreto is perfect for both, very flexible cut. I use it half and half for Sichuan or grilled with a black garlic rub.
