Phenolically somber and rich. Im getting cherries, plums, blood orange and cocoa. The aroma is almost something out of Barolo. The palate is wonderful. This is often my favorite Chevillon wine and its proving that here. There’s a silky elegance to the mature cherry and plum fruit along with some iron notes.
I had this with boned shad and roasted rapini
Sometimes I think I’m supposed to prefer he Les St Georges and the Vaucrains bu Les St Georges just has an elegance the others can’t mach
