2003 Pax Syrah Griffin’s Lair - Opened and poured: bacon, black licorice and some other meats on the nose, the taste added some pepper, more bacon and some other dark berry. Finish was brawny. Alcohol was noticeable but not far out of balance. Drunk over two hours, the alcohol still somewhat hot at that time, added blueberry as the meal progressed. Enjoyable though not in balance on day one.
Day Two - Tried the last third of the bottle, day two was much harsher, much of the fruit faded, alcohol and black licorice dominated, I recommend avoiding a second day.
I would guess that 2009 is the time to drink up.

I decided it was time to give the '03 Alder Springs Terraces a try last night with some grilled pork chops. I decanted about 2PM, and I believe I hit it perfectly…the wine was opened up and singing by dinner. Great huge berry nose, much smoother on the palate than a lot of the Pax wines I’ve had before. Could be my favorite so far.
I agree…the '03s are ready. Eleven more of these babies in the cellar! I’m so glad Joe Donelan is such a great salesman!
John - Unfortunately I do not have any of the 03 Alder Springs. That must have been a great bottle. I do have a few of the 03 Castelli Ranch. I will likely open one soon.
