Over a spectacular dinner of small plates at Zaytinya. This is a magnificent champagne. Spritely and vivacious, full of citrus and just a touch of honey on the back end. Somehow this is able to show both the mellow, darker end of the spectrum along with this snap and crackle of the underlying acidity. A chameleon-like ability to compliment the shrimp is mustard and lemon, the spit roasted lamb, and the tart hummus. Love it love it love it.
nicely done. never had any champers from this producer but i have a sole bottle of this. maybe i should buy few more based on your notes.
I opened a bottle a few months ago after a few posts here claiming that it was falling apart or something. But mine was terrific.
