Served with 60 day Flannery ribeye and pasta with fresh white truffles.
Opened one of these 2 or 3 years ago and wasn’t impressed. Decanted this one at 9 AM and left it in the cellar until serving it at 6 PM.
Didn’t have much going on on the nose upon opening but now this is all tar and roses big time. Big mouthful of dried cherries, nice balancing acidity and while the tannins are quite noticeable on the back end they were just the ticket to go with a medium rare ribeye. I’m sure this has many years ahead of more development but its oh so nice right now. Glad to have a few more.
