From a bottle with relatively low fill, we had given it little chance of ‘being alive’ before opening the bottle.
Big surprise, on the nose a typical old, mature, champagne. Clearly past its prime, but still recognisable as a great champagne and drinkable. Colour was also still very good, sparkles had disappeared though… In the mouth clearly the fruit had faded, as did most of the acidity.
Were this to be a 20 year old Salon, then clearly you would have tossed it in the sink and asked your money back from the place where you bought it. But at 55 years old, this was still very much alive.
Clearly, this has at one point in its life been a very big champagne, and it might still be if the bottle today is in perfect condition, with no leakage etc.
