Chateau Montelena (I can drink some young and put some down and be ecstatic with both)
Bollinger Grand Annee (for the same reason, or in the alternative, some Preuses or Les Clos chablis from a top producer)
BTW, I read the OP to suggest that the pair of wines needed to be $100 in total. I would probably class up my white pick considerably if each bottle could be $100.
I don’t quite understand the perimeters. Isn’t Charvin the producer? Vatan the producer?
I was going to suggest a Williams Selyem Rochioli River Block Pinot Noir for my red but that includes the producer and the vineyard. I might say Roumier Chambolle Musigny but those can run over $100.
For the white wine I will say Dauvissat Les Preuses (as someone else already said) but again isn’t that a particular vineyard and producer?
