My bone-in Jamon Serrano Gran Reserva just arrived last Friday and it looks gorgeous! Looking forward to getting started on it with some friends this coming weekend. Any thoughts on how long the Jamon lasts and best practices regarding maintenance related to keeping it as long as possible?

The response for Berserker Day was incredible this year, thank you all. I over sold my 2018 harvest and intend to fulfill every order as quickly as I can with the new harvest.

I have had a significant disaster in my farm though which has had my staff working night and day. Due to torrential rains a few weeks ago we have had a major mountainside collapse. There are veins of the instability heading directly towards my water reservoir (135 million liters). The collapse has taken out the potable water line to my farm and winery. We have been releasing as much water out of the reservoir as possible to lessen the pressure and stress to the terrain. As soon as the land stops moving they will be able to restore the lines going through a different route but the most important item on the agenda right now is the reservoir.

I appreciate your patience and understanding.

I am awaiting more updates as well... The ground had stopped moving, but there is moisture in the ground coming from somewhere, most probable source is my reservoir. They have to get in there to see what it is and where is the source and stop the water or the slide will continue. They are working on getting the fresh potable water line reconnected, but it is not an easy task. I should know a bit more tomorrow.

They finished to repair all the broken tubes the day before yesterday and when they were covering the tubes back up they had a new break just above the repairs, so yesterday my manager Whatsapp video called me so I could see the deluge of water and the repair work they were doing. The repair work is finished and hopefully bottling can resume and we can get the shipments moving. I am really sorry about the delays.

OK, got our Non Plus Ultra sampler and need some serving suggestions from the more experienced that go beyond "put it on a cracker" for the sardines, mussels, et al. Admit I've never worked with these in the canned form before. Thinking there's probably some quick pasta or other recipe suggestions out there that would highlight these items to their fullest. (And get my 11-year-old to try sardines.)

Hey Susan,
I use the tuna in omelettes, egg salad, tuna melt, mac n cheese. The mussels, I like them on a toasted baguette or dropped on a plate of hot frites and the escabeche sauce drizzled over. The Caballa, I add that to salad really of any type. And the Sardines, I learned to love sardines out of the can when I was little. These are super fine and don't need to be picked apart to try to take out the bone, it's too small. The Ventresca, is the most delicious preserved tuna I have ever eaten, so I typically just open a bottle of wine have a cracker or two and a fork and that's it.

Any concerns about shipping olive oil in hot weather? I'm happy waiting until Autumn for my shipment if you think it's safer.

Hi Jay, I would not have any problem shipping the oil in warmer temps. I should have it here by mid June and I will ship as soon as it gets here. If you want me to wait, please let me know.

Thanks Nola. I think in terms of wine shipments these days so I was probably worrying too much. Shipping in June should be fine.

The pallet is loaded and has left the winery, on it’s way to Valencia robe loaded and start the voyage a couple days afterwards!
It is the lone pallet in the back of the truck!!!

Yes! The shipment arrives today to the port of New York. It will be off-loaded and the container goes to a NY warehouse it gets sorted and directed to a truck or rail. At some point it will go to Customs and get released.

The pallet was supposed to arrive on the 15th to NY, my freight forwarder tells me there was bad weather and it delayed it’s departure. I don’t buy that, it’s leaving from Southern Spain, if there is a storm it moves very fast and done. I think there was port congestion from whatever reason and it was delayed and flipped to another vessel. Whatever happened, it is arriving now, so fingers crossed that they move it quickly and get it to my warehouse. On my end, my daughter Ashley has all the boxes prepare and ready to be filled w the oil and ready to ship.

I have news!!!! The shipment has been released by customs and finally on its way to Dayton, I’m hoping for early this coming week we can get all the orders that have been waiting an eternity. I again am so sorry. It was not my intention to have had so many setbacks, but we are not throwing in the towel.

FWIW, Nola is not the only one having issues with Customs clearances...

I asked my daughter not to ship anything out until I get back from Spain next Wednesday. I want to taste the oil myself and make sure everything is 100% before I begin shipping.
