I know a lot of southern california folks here…
My kids want to visit Disneyland and Universal in August. Figure we spend the rest of the time relaxing somewhere with a pool, near a beach, some shopping, maybe some good activities for the kids. Besides San Diego I have zero knowledge of southern california.
Any suggestions for a town that might make a good homebase for 3-4 nights? Likely either an airbnb or a hotel/resort that has larger suites at not-quite-ritz/monarch prices.

Depends on your tastes
Hyatt in Huntington Beach is great for families, has suites.
Not a place if you want others to be masked.
