Stayed at the converted monastery hotel just outside town a few years ago. Should have been fabulous given the surroundings but a classically “undermanaged” hotel. We were only there for a few days as a family with young children and didn’t look for the top restaurants. However, we did have a very good meal with a fabulous bottle of aged orvieto at the restaurant opposite the duomo in the corner of the square.

I Sette Consoli is our most preferred restaurant in the city.

Dined here 3 times over the years, including one time when we took the train from-and-back-to Rome just to visit and do lunch. Advanced reservations is a must.

5 minute leisurely walk, all within the old town, from the main Duomo piazza.

I figured out it was Vinosus. Apparently, still very good as someone else ate there last week.
