Google tells me there are myriad of car services available for winery tours, but what do folks recommend for transportation to/from dinners in the evening? How reliable is Uber or a cab going to be when one of my dinners gets over close to midnight?

Uber and Lyft can get scarce in the late hours, but there is cab service readily available. Black Tie seems to have the largest fleet of cabs. The farther upvalley you are or go, service diminishes or takes longer to get to you.

Depends on where you are and where you are going. In the city of Napa, you can usually get an UBER or Lyft pretty late, especially on weekends.

You might have to wait 30min or so. If you don't want to wait, I'd arrange return transportation with your hotel in advance.
