I have a business trip to Colorado Springs at the end of July.
I won’t be there in July, but my son is starting at Colorado College in mid August, and I hope to get out there often. Colorado Springs is a great place, so much to see and do. If you want a few restaurant recs I can forward an email I received from someone else a couple of months ago.

You’re in the Denver area, right? I might spend an evening in Denver before flying out just to avoid a 4 AM wake up to get to the airport. Could do something then. That would likely be Thursday the 28th unless I add a few days of vacation time. Will know very soon.
