Thanks Bob, I made the best hush puppies ever a while back but now can’t replicate them. I’ll have to look at this to see how close these are. I have always used a little grated white onion in the batter and sometimes some finely diced jalopeno.

The key is the texture and there are so many variables that contribute to success, that a truly good hush puppy is a rare treat. Quite frankly I leave about 90% of the hush puppies I encounter uneaten as the calories just don’t justify consumption. I’ll break off a piece and check the texture, if that passes I’ll taste a small piece. At that point it better wow me or the rest of the thing goes uneaten.

I would recommend a couple of very slight changes - substitute Lawry’s Garlic Salt for regular salt and use only the green tops of the scallions for a more intense flavor. One other thing to keep in mind. You can adjust the density of the hush puppies up or down to your liking by adjusting the ratio of cornmeal to flour up or down.

I prefer mine with real puppy.
