LOL well, if we ever get out of travel COVID restrictions and I go back for on-campus recruiting at Duke again... I'll pack the board in my luggage and we'll have a great time. I miss Durham :(

Thank you! I checked locally this past Monday, but nothing here locally. I'll keep hoping it shows up.

Much better news from my house, I was able to get my freezer back up and running. It was just a bad thermostat switch that turns out to be a common failure for my model, which I replaced on my own. Four great things about that:

1. Obviously, a fully functional freezer again! (Flannery order being delivered in the next week or so that I had to delay when the freezer went out.)
2. My freezer doesn't end up in the landfill.
3. Saved me over $1K!
4. There are no replacement freezers available in the US and the wait list is 3-4 months, so I wasn't getting one soon anyway.

Tonight's dinner was "Steak Salad" with a 16oz ribsteak, reverse seared on the BGE with a chunk of pecan wood for smoke. Gratuitous flame action shot in honor of Mr. Kotowski.

Will take a couple of USDA Prime dry-aged rib-eye steaks over wagyu and Kobe any day of the week and twice in Friday nights.

I know, heresy, but there’s something to be said about tasting beef, as opposed to fat. I can appreciate A5 in large domino sized slices, but a whole steak? Nah. I’ll take Galician in a heartbeat and probably even a dry-aged Flannery.

Hahahaha! Not there yet; maybe somebody I can figure out how to make money doing this... Recipe is pretty easy, but I make it to taste, so I don’t really use fixed measurements.

Base recipe is soy sauce, brown sugar, sherry or Marsala, fresh ground black pepper, minced garlic and frozen ginger root.

Secret to the recipe, in my opinion, is freezing the ginger root and then using a microplane on it (I trim the outside brown pieces off). Fresh ginger turns into a stringy mess, ginger powder doesn’t do it, but the frozen root flakes and melts into the sauce. I’ll frequently drop in some Red Boat fish sauce or toasted sesame oil if I want to get fancy. Drop your protein in a 1 gallon ziploc, add the marinade and let it sit for 2-4 hours. Check in ever hour or so and “massage your meat.” I don’t like letting it go overnight, personally.

I think the joke was in that Mark typed, "Recipe lease." The reply was, "Pretty sure he'll sell it to you." Not lease it. Ha! I laughed!

I agree with this. That's why I find Flannery CA Reserve to be right in my wheelhouse. Marbled enough to be opulent but balanced by an intense beefy-ness.
