Finished off the last of the slab of Miyazaki A5 chateaubriand last night, with the rest of the foie gras as well, as a makeshift tournados Rossini (substituted the truffles with porcini; and vintage port for the madeira).

A Jorge from some earlier sale and a 16 oz NY from the last of my prepandemic order (good timing on the current NY sale Bryan.. needed to re-up) Someone should write a Freezer Tracker app so we can keep track of what we buy.

We've been seeing "American Wagyu" at our Costco. Some of it just appears prime or maybe prime+. But, when it looks exceptional I grab it. Or, if they have the American Wagyu ribcap medallions like today. I just grab them all. They were outstanding a few weeks ago.

All the cuts - ribeye centers (sacrificing the cap for the medallions), strips, and medallions are priced about $28-29/lb. I hope this continues and isn't just a short term run!

There is a glut of domestic Wagyu right now. HEB has brisket, strip, ribeye, cap and sirloin routinely.
Compact Disc and Wine Theft should be reported and prosecuted.

This wasn’t labeled American Wagyu, just Costco prime but had good marbling, the wife really doesn’t care for the funkiness of aged beef and at $13/pound it’s hard to pass up. Did a direct sear over oak and then finished over a very low heat in my (newly self refurbished) gas grill. I take my ribeyes a little further in temp than other cuts. Hard to beat the QPR for the Costco beef as long as your not looking for dry aged.

Didn’t get a picture but I tried something new tonight. Skirt steaks. Coffee & cayenne rub. Sat for a few hours after rubbing in pretty generously. Weber kettle (regular charcoal since still a shortage) with a baking steel that was blazing hot. Butter on the steel. Three minutes on each side. Served sliced mostly against the grain. Favorite steaks I’ve done in a while. Done a lot of filet lately so felt good to try something different.

Matthiason Cabernet alongside. Good dinner.

Look, I made steak twice these last three days (20oz local grassfed strip and then a nice skirt sliced over a warm heirloom tomato melange), and now I want more steak. Like, a lot more.

It’s interesting to see how the two different cuts look drastically different. The butcher cut flight is a pretty good deal there with the coupon (Flight10) atm, 180 for 8 8 oz American wagyu steaks. I’m a huge fan of their steaks.

LOL - 7:43 AM here and I’m coming to post pics... then I saw that pic and felt exactly the same.

Dinner last night below. I always find porterhouses to be more challenging, at least when you’re trying to get a good crust AND a consistent Med Rare without a gray bar around it. Last night worked out okay, served with a DeLille D2.

I grilled some hangers last night but am having a hankering for Tuscan Rib Eye. On the radar.

The grocery store had some nicely marbled prime rib steaks the other day and peppers are in season, so we made steak, fries and a roasted summer pepper relish.

The raw ingredients:

The peppers, tomatoes, onion and shallot after about 25 minutes in the oven at 400*:

The finished products:

The steak was reverse seared on the BGE at 250* for about 20-minutes with a chunk of hickory wood for smoke, then I finished it off at 500* to get a nice crust. Seasoning was a mix of salt, cracked pepper and guajillo chile powder. It was so tender and fat perfectly rendered (I love it when the meat looks "wet" from the liquified fat).

First Holy Grail American Wagyu ribeye ... very delicious on the Weber. The 2015 Bedrock Ode to Lucien paired very nicely with the HG ribeye, too.

Been looking locally, but none that I can find. Jealous.

Routinely seeing different cuts of "American Wagyu", but at best that has been what I would call Prime+ and most of the time it's at or below Flannery in terms of marbling. When it's good, nice price at $29/lb. though.

Chris, where did you find the A5 in your Costco? I really don't know where to look because it's frozen. Someone else answered me earlier and said it was in a frozen end cap by the fresh meats, but I haven't seen any freezers in that area here.

Of course, my garage freezer just went out and so I don't currently have a square inch to spare in my main fridge/freezer. Evidently, there's a big backlog of demand for freezers due to COVID, so not sure when I'll be able to get a new one delivered.

This was in the rows of white freezers. It was next to some pre-made frozen wagyu burgers (which are very good BtW). I would not call the display obvious and would have walked past it if Craig hadn’t seen it and sent a text.

There were probably 60 packages of the one I show above.

If the Costco unit ID is visible, the return/customer service desk can likely identify if it is in a store near you.

Seems like A5 wagyu ribeye is #60000. NY Steak is #50000

Last night's Lettuce Wrap dinner was delicious.

The local market had some decent looking prime NY's on sale after the holiday weekend, so I picked one up and threw it in a ziploc bag with a store-bought pineapple and ginger teriyaki sauce for about 6 hours. Patted it dry and then seared on the BGE at ~450* for 4 minutes per side with a couple of chunks of almond wood for a light smoke flavor. Plated up some cold baby lettuce leaves and lots of garnishes to choose from including chopped fresh mint, cilantro, scallions, grated carrot, "pickled" sliced ginger (really just ginger in rice wine vinegar), "pickled" peppers, and "pickled" radishes mixed with shaved shallots and Korean chili flakes.

All farmers market - local grass fed ribeye, potatoes, haricots verts. 90 second sear on each side at 700F, 5 min at 500F on the rack to finish. Potatoes were from the grill as well.

Tri-tip night at the AKGrill (my porch). Only four of us, which is why I didn’t slice the whole thing down... but I had to show off that center, which can be rough to cook consistently because of the shape of the cut.

Thanks... I liked it, it was a good pairing. Definitely best with food, it’s a bit understated and not a crowd pleaser. My notes:

Cassis and menthol on the nose. Ruby on the rim. Austere on the palate, hints of sour cherries and assorted dark fruit. Medium plus acidity, medium body. Tannins have mellowed, still noticeable.
