From dinner last night at La Cabrera (a branch from an Argentinian group of restaurants):

Dry-aged chuletón con hueso (1kg). I don’t know for how long it was dry-aged; but I’d guess not more than 28-34 days as it wasn’t notably “nutty” or “cheesy”. Nice texture though.

Premium entraña (skirt steak). I don’t normally eat skirt steak; but make an exception in this restaurant.

Flannery picahna; 2.5 hours at 200 until 132F, rested for 30 minutes, then sear on super hot skillet for 3 min with fat cap down then 1 min with the meat side down.

Prime grade ribeye which a good portion of looks more like A5 grade marbling? Purchased for $21.99/lb @ Costco, then got a price adjustment post-purchase when the stores started to run a $14.99/lb special on Prime ribeye for the Super Bowl this week? Survey says YES!

Last night's dinner. Fess Parker Ranch wagyu NY strip. Reverse sear on the Weber and only salted a several hours in advance. No smoke/wood this time around.

Hit this on cast iron with lots of butter, finished off in a Breville on broil. Crust for days!

I used a probe thermometer. I would guess it took about 45 minutes to an hour.

Trying an experiment tomorrow; got some chuck blade roast (flatiron steak) from Whole Foods, gonna try sous vide and sear. Could be a good weekday dinner/lunch option if it’s good.

I can't get over how good entraña is, but so far I have not been able to come close to replicating it at home. My Argentinian neighbor just throws kosher salt on the skirt steak, throws it on the grill, and that's it, and it's one of the best steaks I've ever had. Blows my mind.

Yup, that's exactly how the restaurant's Argentinian chef told (and showed) me it's cooked. According to him, it has to do with how the grill gets up and distributes its heat, and the kind of wood they use. Whatever their true secret is, their entraña is the only skirt steak I ever look for.

Reverse seared flank steak in ghee with rosemary, thyme, and garlic ... and, more importantly, my first DI CO. An outstanding cab decanted for 90 minutes in the Grassl.

Whole Foods grass-fed prime, salted for 8 hours, pan-seared on medium, flipping every minute or so... very tasty.

Every once in awhile, I score big at Fairway. Marked as Choice for $9.99/lb over President's Day weekend, plus store coupon of spend $50, get $10 off, brought it down to $8/lb. I bought 10 or so pounds worth. Cooked one up reverse sear. Stunning.

2 day dry brine then oven at 200 until 133F (about 3h) then 4 minutes in the skillet (3 min fat side down, 1 min meat side down. No fat trimming.

Chuletón Txogitxu at Txoko Asador (the new restaurant of one of our friends) this past Wednesday dinner for fellow Wineberserker, Clem Nieto, who was in town. It was more done than I like; but the flavour was spot on.

Gorgeous uniform doneness, Brian. I can't stand under-done ribeye, but when one melts a lot of that amazing fat like it appears you did...well, that's why we love ribeye. *drool*
