heheh, yeah, I get it. but, in fact, its the opposite of what one might think...check this out...Japanese Wagyu has huge amounts of Omega 3's 6's (monounsaturated fats) and high concentrations of oleic acids...more Omega 3's than wild caught salmon actually The fats here is not your enemy...on the contrary its good for you.

yep...easiest steak to cook in the world actually...Maldon sea salt flakes, 3 minutes medium-high heat, flip and cook another two minutes and your done. I like to cook to medium to melt the fat in the middle of the steak...hard to overcook these too.

A buddy of mine and I have a local butcher doing long dry aging on some ribeye for us. This is just a shade under 60 days dry age from Angus breed finished with pea and barley locally here in Ontario. It will be broken down on Friday into seven bone-in Ribeyes at about 65 or so days dry aging. Really, really looking forward to eating the first steak this weekend.

This is the small end of the ribeye. The larger end looks like 40+% rib cap! Sorry that the picture is posted upside-down for some reason .

Thanks for posting. I'm a huge believer in this after plowing through quite a bit of Galician beef after watching Steak (r)Evolution on Netflix. Just amazing stuff and worth the extra tariff.

I'm going to have to start posting in this thread. My inlaws have a farm and raise grass fed beef as a side business/future retirement income. They obviously won't have the marbling that a lot of the steaks in here since they're grass fed, but the flavoring and quality is unreal. Next cow comes back I think on Sept 22 (40 day dry aged). I'll see what I can post and can link their IG account if anyone is interested in following.

God that looks good, Bill. Curious to know how the quality/flavor was as I purchased a Costco prime NY strip sub-primal (7.99/lb!) and have it dry aging to hit the 100 day mark in time to make a strip roast for New Year's Eve.

Qualilty and flavor were excellent. Being fairly thick, I did give it a six hour salting before cooking.

100 days is going to be funky. Hope the guests all apprciate the effort!

Painted Hills beef, pan-seared in an iron skillet and finished off in a Breville. Was hoping to grill, but got him at 7 from my kids’ soccer game (and it was raining).
