You are right, cap separate from flap. Corrected it upthread with a very nice explanation on that website. Sorry for the confusion, and many thanks to Rodrigo for helping me understand that the French have multiple cuts that are called bavette! :-)

Been looking for some good American Wagyu NY’s since we left our favorite meat shop in LV. Ordered some Akaushi American Wagyu from Holy Grail. Did a simple steak and frites. Salt, pepper, reverse sear. Pulled at 118 internal and rested. Sliced and finished with some fleur de sel. The steak was rich and wonderful. I’d order more but now showing sold out. I’d probably go a few degrees past 118, but Lisa likes the rarer side so everyone was happy.

My freezer is like a Tetris game. Barely fit this delivery in. Need to visit some suburban friends with grills. Empty out some space. Funny how prime beef and good wines gets me invited back time and again. (I have created a few Flannery customers over the years... we'll create some Morgan Ranch fans too)

I've been in the grocery business a long, long time. I've ben trying to change the paradigm of the term "perishable" to "fresh" in regards to meat and produce warehouses. Perishable implies that it is dying, fresh implies that it is refrigerated/fresh.

I make a batch of “southwest rub” that was largely inspired by Bill “Tex” Landreth - 1 pt salt, ground pepper, granulated garlic, chili powder and .5 Mexican oregano. I’ll hit the meat with that a few hours before and, if I’m feeling punchy, I’ll add some bourbon barrel smoked paprika to the mix. Cook direct on a fire where the coals are glowing, but not a lot of flame and then sear both sides. I cook to feel, with the expectation that my family likes rare to medium rare. More of a feel thing vs temp. Let rest for 10 mins and the. Slice against the grain, at a slight angle.

Ok, some proof of life with this one.

This is a snake river prime cowboy cut ribeye. This is thinner than most, so I pulled it 5* sooner (110*) than normal.

Most are .5" or more thicker than this one. As a result, the internal temp wasn't quite as consistent edge to edge as normal and it's not as rare as normal.

Sliced and then served with some 25 yeat old balsamic glaze.

Nice! I cooked Flannery hangers last night as well, marinated in Dijon mustard, white wine and tarragon. Fantastic and brilliantly easy for stovetop cast iron.

Steak and Frites. Holy Grail American Wagyu American Akaushi NY, fleur de sel and fries. Simple but good. The 2005 Clos du Marquis is coming into a nice place. Very aromatic, still a bit tannic and tight. Good with the Wagyu…

I was charged with cooking a couple of dry aged porterhouse steaks at a beach house with a broken grill
reversed seared and then threw on a little dinky weber for some crust

I was a little nervous, pulled from the oven at 105 let rest then grilled and sliced.

@Suzanne - it’s meals like that where I want to throw the tongs down, yell “ladies and gentlemen, you’re welcome” and take a victory lap around the rental. Pulling a cook off on a janky gas grill and a Weber is an exercise in patience (and luck). Nicely done.

this was expensive dry aged steak and it smelled great like Flannery does.
I was careful not to ruin it. My hostesses were happy.

Lots of good inspriration in this thread! For my birthday, I decided to cook a meal for some of my best friends (gazpacho, ceviche, burrata pasta, watermelon granita, ribeye steak, potato pave with yogurt sauce, butter lettuces with sesame dressing, roasted carrots with balsamic glaze, hazelnut / chocolate cake, watermelon sorbet).

Blurry pic of the 2.5 .lbs prime cowboy ribeye from Gelson's all sliced up. Topped with gremolata. Steak wine was 2006 Sandrone Le Vigne.

Dry brined 24 hrs in advance, followed by almost 2 hrs in the oven until it reached 120-125. It got ~90 seconds per side on my Weber charcoal grill with ripping hot lump charcoal.

Flannery ribeye - check
Weber kettle with lump charcoal - check
Once & Future Old Hill Ranch - check

The sum of the parts were fantastic: Flannery ribeyes are always delicious; O&F OHR was on the young side, but I had 3 so wanted to check it out - it had a good amount of old vine bramble, spice, and acidity to cut through the richness of the ribeye.

All in all, a very enjoyable Sunday dinner.

steak night. Too rainy to grill so I did this single 2" thick Costco prime NY Strip inside reversed seared.
Salted and let dry in the refrigerator for a day

Brought to 110F and rested 10 minutes and hard seared.
