No pics but we did a side-by-side comparison of the 56 day and 84 day Flannery last night. 129 degrees for 90 minutes and then a quick sear on top of the chimney starter. I really loved both; my wife did also but preferred the 56 day.
I was not sure what to expect. The funk is certainly present, but I did not find it overwhelming. Mostly there is just a superb depth of flavor with mushroom, Gorgonzola, and a beefy “brand new leather purse” quality. Sometimes a steak is simply the protein on the plate; with this steak, there is no doubt that you are consuming bovine. We drank ’15 Lewelling Napa; next time I will reconsider. The Lewelling was tasty, but I think the steak screams for an acidic red with some age.
We ate half and saved half because there is so much depth of flavor in the steaks.

USDA Choice? Yes please. Didn’t even have steak on my mind when I went to the store. Couldn’t let these just sit there. Unfortunately cut too thin for a worthy after photo.

Holy grail tomahawk; sous vide 3.5 hours then rubbed w olive oil and salt, then 4/2 min on the grill. Perfection.

My wife and I did the exact same thing Saturday night. Side-by-side of the 56 and 84 day steaks, but sous vide to 126 degF then quick sear in a cast iron. We both preferred the texture of the 56 day, but I preferred the flavor of the 84 day. The 84 was a bit to funky for my wife.

Paired well with a 2009 Reignac, but the steak was definitely the focus.

Grass fed bone in NY strips, dry brined and sous vide with herbs for 2 hrs at 130, cold smoked shortly and then seared on the bbq over mesquite. Rapini done in the oven with olive oil, red pepper flakes and garlic, ultra crispy duck fat potatoes with rosemary, thyme, gruyere and reggiano. Opened a 2016 Saxum G2 and it was great. Awesome dinner to end a long week!

It's funny that Crowd Cow is advertising a ton during the TV coverage of Mariner's games, so I am see that Joe guy endlessly. Seems like 4-5 times per game.

We have a ranch hand that physically lives on property. I don’t have to do anything other than eat the beasties.

I think it looks rarer than it truly was. I pulled at 120, but will concede that it could have used a bit longer as it was super rich and the fat needed to render.

I buy most of my beef local woman a few miles from home. It's 100% grass range fed and not wagyu, not nearly as marbled as the beef in that photo but it sure is good. She says lamb/sheep are the biggest pain in the ass to raise.

I'm doing a couple Flannery rib cap medallions this weekend and I plan to to reverse-sear. At what oven temp would you start it, and at what internal temperature would you remove it to then sear? Keep in mind, this is a trussed cross section of the cap, so very fatty...but oh so delicious. Your advice is appreciated.

bc its ribcap, I'd pull at a higher temp than normal. so 125 then sear and eat at 135/140.

Agree with this direction, and I normally eat my beef rare.

As for his question about oven temp, I don't think it matters too much as long as it's low and you pull at your desired temps. I usually do 225 on a rack, not sitting on a pan which transfers more heat to that side. Some people do 200 and others 250. Sometimes to speed it up, I'll start at 250, then lower it to 200 after about 15-20 minutes. But, I also suspect I'm overthinking that.

The pull at 125 and then sear worked great. When flying solo, these ribcap medallions are absolutely perfect. Paired with a 2012 No Girls Tempranillo - a nice match.
