Brocciole

I had some skirt steak… marinated in a bit of white wine, S and P

Filling:

I always/ usually eyeball my Italian cooking:
Bread crumbs
Parsley
Provolone
Romano
Cooked Onion /garlic
1 egg to bind … mix these together then add in chopped boiled eggs

To make: Take and layer skirt steak, prosciutto , Filling… roll and Tie!!

I put mine in sugo for about 1-1.5 hrs!! I served this with Primativo

Paulie, I have never used the egg in mine, though many of my friends do.
I use round steak cut thin, and pounded, and then I coat with olive oil, fresh parsley,
chopped garlic, salt and pepper, Roll up, secure with toothpicks, brown them off and drop in the gravy.
