Mama's Pecan Pie

#101 Post by P. Willenberg » November 14th, 2017, 11:28 am

FWIW, I like cooking pies on the bottom rack as I feel the crust gets more crispy.

Mama's Pecan Pie

#102 Post by Gary Schulte » November 27th, 2017, 5:27 am

Robert - Thank you for the recipe. We absolutely love the no corn syrup aspect to it. Mama's recipe seems to balance the sweetness level just right. The proverbially "we" have made this as a pie and most recently as a rectangular tart...see pic. Thank you again.

Mama's Pecan Pie

#103 Post by Robert.Fleming » November 28th, 2017, 9:10 am

My pleasure, Gary, though I suppose I should apologize again for putting corn syrup producers out of business.

I baked 8 of them, plus 4 of Mama's Apple Sauce Cakes ( viewtopic.php?f=6&t=35090&p=461776 ), just before Thanksgiving for a bake sale to benefit Toys for Tots. My firm has been doing that for several years, setting up in the lobby of our office building on the Monday and Tuesday before Thanksgiving. People are now trained to look for pecan pies, and they sell ($20 each!) as soon as they hit the table. I'll have to recruit help, and aim for 20 pies next year. Mama would love it.

I make at least 4 between Thanksgiving and New Years. My kids demand it and I'm happy to oblige. I also make some tart size ones for them with the extra filling. And I frequently add chocolate as well.

I do an annual T-day leftover party where we wrap leftovers in puff pastry. Pecan pie wrapped in puff pastry is a artery killing delight.

Our household baker made one for Thanksgiving (with neighbors) and then a second one for us. Always a great pie.

Had this for Christmas, and it was a lot better than anything I have bought. Thanks a lot to all who posted about this recipe.
