WATERMELON SALAD

Another beautiful and refreshing summer dish tonight. You can also serve it as a starter for a Menu. Your guests will be impressed, promised.


Ingredients

1 big chunk chilled watermelon (ripe&sweet)

„Picandou“ fresh goat cheese ( 2 each person)

1 lime (1/2 each person)

mint leaves

hot smoky paprika (Pimenton de la Véra)

olive oil



Preparation

  1. Slice a piece from the big chunk of watermelon. Make a cut and slice in pieces

  1. Put the pieces to a plate

  1. Use 2 goat cheeses each person

  1. Add little chunks of goat cheese to the melon

  1. Then add lime juice and drizzle with olive oil

  1. Also drizzle with hot (!) smoky paprika, don’t be shy.

My variation of this uses Feta because it is saltier than goat and i do a combo of mint and basil. My wife asks for it every night this time of year. I also like a little balsamic and purple onion on mine. I use the lime if i don’t use the balsamic.

Classic too with Feta, but I find that fresh goat cheese has more finesse.

haha…I see, my American friends add basil on everything.

I make a similar salad with grilled Halloumi instead of goat. Watermelon, mint, olive oil, salt/pepper. Great simple summer salad.

Also a good option instead of feta or goat cheese.
BTW, how is the taste of Halloumi? Mild or spicy??

It’s a mild cheese. A little tangy, salty. We often marinate it in olive oil and some fresh herbs before grilling. It’s really delicious and goes so well with watermelon.

This is the watermelon/Halloumi salad. I had a craving after seeing this thread yesterday morning.
I put it on a bed of arugula and drizzled a little balsamic on top. Delish!

Chopped kalamata olives on this salad or a less briny green olive is pretty good (have also always used Greek or French feta). Good stuff.

We’ve had a bunch of these already this year. One of our favorites. Watermelon and cherry salad, greens, pistachios, shaved ricotta salata, Champagne vinaigrette.

I love a sprinkle of fresh ground green cardamom on watermelon salad. Has to be small enough to be subtle but it adds a lot of dimension.

Pickled red onion always works well with this salad, I find. Might try my pickled rhubarb with it this weekend.

Can’t miss with cold sweet fresh watermelon!
Add arugula feta cheese(our preferred choice) and yes fresh basil which we always have from our garden.
