wood fired pizza oven

I’m putting in a large patio this summer and am going to get a wood fired pizza oven. I was an early adapter of the ooni and love it, but want to graduate to the real thing. I was looking at the Chicago Brick Oven model CBO-750 DIY Wood-Fired Oven Kit as a reasonable mix of size, price, and functionality. I’m interested to see if anyone has any suggestions, alternatives, reviews, etc.

I’ve been thinking about getting the Gozney dome. It’s the closest prosumer oven similar to what I was working with in Naples. But sadly they are on backorder.

Berserker Larry P built a Forno Bravo wood-fired oven a few years ago and documented the process with photos:

I remember being amazed at that. I am not that ambitious at this point in my life. I’ll be buying a kit for my patio guy to install. I’m sure it will not be either as effective or attractive, but a lot less work.

I don’t know about the Chicago brick oven but i can share what we ended up with.

We put in a wood fired oven 8 years ago, it is an Earthstone model 190 which is 35" in diameter. https://earthstoneovens.com/residential-modular-ovens/. We are glad we got this size, I think they over estimate what would fit in the oven, we generally only cook one pizza at a time even though we could do more, it looks like your CBO is of a similar size. For what it’s worth the Earthstone was what they used in the show Hell’s Kitchen.

After we used it a bit we took a multi-day cooking class in Sonoma offered by Mugnaini so of course we used their ovens https://www.mugnaini.com/classes/hands-on-cooking-classes/. One nice thing about the cooking class is you get to cook in different size ovens and get a feel for what might work best for you.

The difference in the two manufacturers is the Eartstone has a much taller dome than the Mugnaini and as a result it takes longer (and more wood) to get to a white dome. Looking at your link to CBO website the dome more closely matches the Mugnaini.

The chimney’s are a bit different too and i think the Mugnaini does a little better job of holding in the heat than my Earthstone. It looks like on the CBO you may cut in the chimney?

We left the cooking class preferring the Mugnaini to the Earthstone.

The oven is quite the magnet when you are entertaining a crowd.

We have had a Four Grand Mere 950B (low dome) model for the past 5 years and it has worked out great. We bought from breadstone ovens. Easy to assemble and use. It can comfortably do ~3 pizzas at a time although we are usually limited by the pizza assembly process.
