FOCCACIA di RECCO

By coincidence I made yesterday afternoon the perfect TV finger food, unfortunately (!). Fair to say I am still shell-shocked.

Here we have a Focaccia from the town of Recco near Genoa. In contrast to the traditional fluffy Focaccia with yeast, here we have a super-thin Focaccia without yeast. I used leftover cheese from New Years Eve, so you can use any kind of melting cheese like Fontina, Raclette, Parmesan. Classic would be the italian cheeses like Stracchino or Crescenza which I have never seen in Berlin.
