Cryovac Wagyu, fridge or freezer - what would you do?

Bought a 3.5 lb cryovac boneless waygu ribeye (packed on 11/21, with a best before of 12/24). Plan changed and now won’t use it until 12/18 or 12/19. Would you keep it in the fridge still vacpac’d for the next month or freeze it for now?

I don’t think it’ll benefit from wet aging so I vote freeze.

I’d just keep it in the fridge, but agree with Betty’s comment. My opinion (influenced by Flannery) is that wet aging isn’t much of a thing. You could also pull it out and dry age it in the fridge. If I was doing that, I’d rinse it, then put a light salting on it a place it on a rack. But, whatever you choose, I don’t think there’s a wrong answer here.

If you have a freezer that is not frost-free I would freeze. I freeze anything I won’t be using in the next seven days in our chest freezer.

But, if you’re freezer is frost free you run danger of freezer burn. Probably less risk over a four week period but still a risk.

A dry-aged Wagyu must shrivel into just an obscenely expensive hunk of tallow.
