Utterly delicious and a sublime variation of the classic pesto. I had some leftover of pecorino&parmesan, lemon and pumpkinseeds, as I made a pumpkinseed bread 1-2 weeks ago. The extra kick is to add a touch of Austrian pumpkinseed oil and pumpkinseeds shortly before serving. I don’t know whether pumpkinseed oil is common in shops around US. Anyway, you will love it.
BTW, to add 1-2 tbsp pumpkinseed oil to your normal salad dressing will add extra dimension to your salad. Also great with german/austrian potato salad incl. cucumber.
