WATERMELON-FETA-SESAME Salad

I guess that this recipe is quite familiar to you. Anyway a lovely light and refreshing dish for these upcoming hot summer days.

Note: as you can see, the Feta cheese is a bit too much crumbled. It is better to use big cubes

I’m a fan of those ingredients together but I find tossing them together is not the best approach because the feta sort of takes over a bit. I do small skewers with watermelon, cubed feta, cherry tomatoes and mint that is always a big hit during the summer. This was a good reminder that perhaps I should make that this weekend!

If you skip the sesame seeds, add a sherry vinaigrette to dress. I prefer a presentation more along Rich’s and keep it simple with just the watermelon, feta, and mint.

Thanks for the post, made this last night. Pickled onions went on at service. Used a mix of Basil and Mint, Olive oil and a little Balsamic.
