There were a couple of good local sources at the farmer's markets. We haven't lived in Seattle for more than 5 years now, so I don't recall the names at this point.

For those experienced with Pasturebird -- Do you know if they ship frozen? There doesn't seem to be anything on the website or in the emails about this. My shipment arrived with empty bags that seem to have once contained dry ice and some cold but not frozen birds. Unclear whether I can freeze them or should cook all of them asap. I've emailed them but I sense they are pretty swamped right now.

I have also bought them fresh not frozen at a local butcher in Santa Ana. I recall receiving them frozen from Pasturebird but I sent them an email to be sure my memory is correct. Will check back.

Mine also showed up mostly thawed. I'm not very thrilled with having to re-freeze the chicken, but I don't have much of a choice with the 10 that I ordered. That being said, we roasted one of them yesterday and it was fantastic. Hopefully the re-freeze doesn't hurt the rest of them too much.

Yeah, we had one last night and it was ridiculously good. I think they might cook slightly faster than the chickens I'm used to - we're going to cook another one tonight, freeze one, and hand another off to a friend. Pasturebird got back to me this morning and said that they were fine to refreeze.

Mine just arrived. Not frozen but at least cold. Oh well. I'm going to cook one and freeze the other 3.

I cooked my first Pasture Bird on the BGE tonight. Super-duper-tasty. About as good as any chicken I’ve cooked.

The ‘09 Faiveley Chambolle ‘La Combe d’Orveau’ opened alongside is phenomenal and drinking very well in its youth. Intense, layered fruit yet surprisingly lithe for the vintage.

The best lamb I have had that seems to be commercially available is from Border Springs in Virginia. Not sure where they sell but I can get it locally from Inland. https://www.borderspringsfarm.com/about ... ings-farm/

Trying Martin's recipe with Sarah's recommended Elysian Fields lamb which was beautiful when it arrived; I had never mail ordered lamb and thought it was pretty cool that they would wrap the ends of the bones to prevent puncturing the bag, as well as pre-tie them with butchers twine.

Last night I cooked one of the unfrozen-on-arrival-but-then-refrozen Pasturebird chickens. Still delicious. But on reflection my local farm’s pasture chickens are just as good. So I’ll probably stick with them.

Meatnbone out of Miami has really good pork and beef. They have several cuts of Iberico pork from Spain - just amazing. They are also an authority on picanha - sourcing A5 Miyazaki, Aus 8-9 wagyu, Uruguayan grass fed, USDA prime. Highly recommended.

I've spent the last month in Telluride and we've been cooking every night. To stock up, we placed big orders at Flannery and d'Artagnan, as well as some orders at Browne Trading Co. Here are some impressions:

- Flannery steak obviously is phenomenal. We had a 'Jorge' California Reserve last night that was off-the-charts good. Great ground beef too.

- Flannery's pork porterhouses--purchased on sale for pretty cheap--were if anything even better than the steak. Perhaps the best things we've eaten all month. Just brilliant.

- The best thing from d'Artagnan were the veal chops. Super-duper tasty. Duck breasts were also very good.

- d'Artagnan Green Circle chickens are good. But they are not better than the Pasture Bird chickens. And honestly, probably my favorite chicken is the pasture-raised chicken from a local farm near Houston.

- A rack of lamb from d'Artagnan was merely okay. My local farm's lamb, when they have it, is far superior.

- Everything from Browne Trading was first rate. Particularly excellent Halibut and Turbot. Very tasty salmon roe. And honestly the pricing isn't that bad.

When I return to Houston, I'll continue to order from Flannery. But I'll probably stick to my local fishmonger (Blue Horizon Seafood) for fresh seafood, and I'll continue to buy chicken and lamb locally.

They sell whole, skin-on pork belly, which a blast to break down and make two slabs of bacon and ends from. Pork chops were spectacular, as well, and how I was initially introduced to them. Both of these cuts were top shelf, imho. If you get ribs, make sure he butchers them right; they did a crap job with my slabs, and sent me two racks with a bunch shiners.

Try a capon sometime, if you can find a real one. Takes chicken to another level, with deeper flavor, denser flesh and richer fat.

Great! I haven't had one from D'Artagnan, but I imagine it's good quality.

Be aware that the color of the meat can be different from a normal chicken. Specifically, the dark meat can be quite pink in places, even when it's cooked through, so don't be alarmed if the color looks a little raw.

Great! I haven't had one from D'Artagnan, but I imagine it's good quality.

Be aware that the color of the meat can be different from a normal chicken. Specifically, the dark meat can be quite pink in places, even when it's cooked through, so don't be alarmed if the color looks a little raw.

-another vote for Joyce Farms poulet rouge. compared to green circle they have MUCH smaller breast and MUCH bigger legs

-likewise Browne Trading for sushi. EVERYthing has been peak and 100% stellar. compared to Catalina Offshore, where the frozen products are hit and miss

-the Jorge from Flannery is a beautiful piece of meat!

I'll add... Pasturebird looks great. FANTASTIC prices that include shipping... like $10 a bird! wish I found this during the initial Covid-freakout!!!


BUT... there's no description of breed or commitment to air-chillling or size within 25% weight<<<both are deal breakers for me. Small, waterbaloon chickens with skin that won't crisp=no thanks.

Joyce Farms is reliably sized (3.5-4 lbs as opposed to 3-4lbs for Pasturebird), air-chilled, and a specific heirloom breed.

WITH shipping, four shipped to my zipcode by Joyce Farms (compared to Pasturebird) is pretty much the same cost/$5 less than Pasturebird.

Can't beat $10 chickens from Pasturebird though lol

When/if the shelves empty again, Pasturebird will be me go to. Until then, Joyce Farms

just wanted to throw in another data point for the heritage Green Circle chickens. especially when they are on sale they are really worth it. I haven't tried pasture bird yet but compared to grocery store chicken, Springer mountain farms, all levels from Whole Foods, and local chickens bought from the farm and through a local co-op there is a noticeable flavor improvement with the green circle, whereas most of the other ones have just all tasted like chicken to me.

the Green Circle is actually cheaper than everything except the Publix and springer mountain chickens when its on sale too!


I should also add, for Costco members you can order them via Costco.com, along with a lot of d'artagnans other products!

Tonight I cooked a Flannery rack of lamb for the first time and it was killer good. Far, far better than d'Artagnan and better than my local farm. I've had lamb that equals it but I'm not sure I've had better. Pics here: viewtopic.php?f=1&t=173044

Yeah, too bad they stopped selling whole birds. I finally had the freezer space to put in an order, was really looking forward to it.

Unfortunately not anytime soon. We will be offering a new product come November that is similar to the whole chicken/spatchcock bird. But for the time being we just have the cuts available.

If you are interested in whole birds I suggest heading over to Crowd Cow who also offers our birds and they ship directly to your doorstep.

A few of my favorites:

-Northstar Bison for grass fed bison, elk and lamb. Like this better vs Wild Idea, which is think is the other main provider of grass fed bison. Elk is solid and I’m not aware of too many other US places selling it online.

-Honolulu fish co. Limited selection but tuna and opa are awesome. Shipping is free and prices are reasonable.

-Catalina OP. Never had any issues with quality beyond one mediocre yellowtail (usually is phenomenal) order and would call out the fatty tuna as a particular home run. Some of the best fish I’ve ever had. Will have to try the browne trading sometime

-Kansas City Cattle Company. Great steaks, lamb and pork. Their hotdogs are top notch.

I would say get a Kelly Bronze. The most flavorful turkey I've ever had. Raised free-range in the woods, hand plucked, and hung 7 days. A couple different places carry it: https://www.kellybronze.co.uk/find-a-stockist/

Good call. Their pork is fantastic, and luckily available at the butcher shop a half mile from my house.
Tails and Trotters is fantastic. I’ve had their massive pork chops 7-8 times, available locally from Rain Shadow Meats.
