ORECCHIETTE with GORGONZOLA and CAULIFLOWER

Its RAINING in Berlin, time for cozy&comfort food. In the past I always roasted cauliflower in the oven which also does magic to other vegetables, and I added spices like Dukka or Raz-el-hanout to the cauliflower florets which gives a nice exotic touch.

But here we have an italian dish and its all about simplicity&purity.

This just sounds so wrong, but I have the soapy reaction to most blue cheeses.

Any thought on how to modify to skip the heavy cream? Looks great as is, but just curious.

P.S. taste even better re-heated on Day 2

Gorgonzola a little overpowering for me with something as delicate as cauliflower and orecchiette, probably find a mellower cheese.

Some capers or lemon, with a good dose of black pepper, might liven it up too.

I recommend Gorgonzola cheese with Mascarpone, its softer in flavor. My regular Gorgonzola was quite soft and did not overpower the cauliflower.

In addition with Masacarpone already included in the cheese, you need no cream extra.
