Amuse Bouche ideas

All, formal dinner coming up and I want to serve a sexy but simple amuse bouche. Preferably something that can be mostly prepped pre dinner. Presentation is important! Any ideas?

An oyster on the 1/2 shell with 1-2 slivers of nice firm uni and a dollop of caviar on top. No need for sauces, scallions, creme fraiche or anything else, just a small fork, and rest the shell in some pink or other colored rock salt on a small plate. It tastes like the ocean has invaded your mouth in a good way and goes awesome with a few sips of champs if that's what you'er serving.

Great idea, thank you. I have one guest with a shell fish allergy. Any other thoughts?

I like filling Belgian endive with various things like crab salad, smoked trout spread and capers, and/or aioli, walnuts, and grapes.

Smoked Salmon Blinis, always popular. Maybe some caviar to really stand out.
