Alligator

I just grilled some (previously frozen ) alligator filets. I love alligator. Just used some oil and salt and pepper to start on all. Then put some jerk sauce on half of it. Yum .

There is a restaurant in Nairobi that serves grilled crocodile - very seriously great. Sort of like the best lobster meat you have ever had x 10. Is that anything like your experience with alligator?

Haven’t ever had alligator that is as sweet as lobster. My experience is it has the texture of chicken and the taste of fish.

I think it tastes like a fishy chicken thigh, but not in a bad way. I keep threatening my wife that I am going to order a whole one online and put it on our smoker, the timing just hasn’t ever been right
