I’m guessing this is a regional offer. Was at Costco yesterday to grab some copper river salmon and didn’t see anything of the sort (I also wasn’t looking for it).
I cut it off the bone and vacuum sealed it in a few bags. Seems fine but I’m not trying to make fine shavings from it. I’ve tried an extensive amount of Country Hams–but this was my first experience with buying a whole leg of Serrano ham. My brother thought he could tell the difference in that it was more tender and milder than country ham–but I didn’t think it was better than Edwards, which uses Berkshire hogs to start with.
