Zuni Café at 40.

Nice piece by David Tanis. I’ll always regret not getting to eat there while Judy Rogers was alive. I would have loved to meet her. I did buy the Zuni Café Cookbook and it is a fascinating read. The pickled onions are a staple in my fridge.
Nice to know that (in his opinion at least) the restaurant is doing well.

Also one of my favorite cookbooks. I love their recipes for stock – and they have an amazing Brassato that I continually tweek. And of course the chicken salad. Like you, I never got there to eat, but the cookbook is still referred to often.
