Mashed sweet potatoes with maple syrup/chipotles

A friend passed this along to me; I’ve made it twice now over the Thanksgiving holidays. It’s super easy, but you’ll want
to taste and retaste the chipotle levels to make sure you get the right balance. You want the spice/smokiness of the chipotles
in the final blend, but you don’t want them to take over and dominate all the other flavors.

This has been one of my go to dishes for years. I don’t add the cinnamon. I do add a small bit of maple extract to the potatoes along with mashing with a bit of heavy cream and butter. The extract gives a bit more maple without additional sweetness. I make a small pitcher of butter and maple syrup to add by individuals. I also scatter green onions/scallion tops over the top. Basically it is a savory dish with a sweet/fire kick.
