FLX Table (Big Pimpin Wine Pairing Question)

I’m excited for my first FLX Table experience on 12/27. Happy to hear from anyone about what to expect of the current menu. Also, I’ve reserved/selected the Big Pimpin’ wine pairing. There is one more (forget the name) above this level. Wondering if anyone has experience with the Big Pimpin one and/or the highest level pairing and could provide some sort of expectation. We dined there in October and enjoyed our experience. We initially purchased two Baller (mid level) wine pairings; however, when we were seating, I upgraded one of the pairings to the Pimp Daddy Baller. You will have an opportunity to review the wines available in each tier before making a final decision. All the wines were very good, but the Marcassin Pinot Noir and 1989 Chateau Musar tipped the scale for me. YOLO, right?

Just a quick report. FLX Weinery was, once again, mostly fantastic. The hot dogs and kimchi poutine were great. The service was wonderful. The hot dog buns were partially frozen and entirely ice cold. Such a damn disappointment in that respect. But the highlight was finding a ‘94 Renaissance in the “Secret Wine Fridge” for $99. It was the best wine of the week no doubt. Super good. FLX Table was also very good. Not as good as I’d hoped it would be, to be honest with you. The service was stellar. Most dishes were very good but some seemed like they were still in an “experimental phase” and not “ready for primetime”. Some tweaks are definitely needed for these dishes. Sad to say, but the best dish was the bread sourced from elsewhere along with the different butters and spreads they served with incredible local vegetables and perhaps the Duck. Snapshot on the Big Pimpin’ wine program: the '13 DRC Echezeaux was so young but fun to try ($50 upcharge) the '83 Yquem (out of 6L) had noticeable TCA (but tasted great). Highlight of the wine was the champagne (Jean Milan, Trasparence" BdB) and the SQN Atlantis Fe203. The price is definitely more than fair, and the room and service is delightful, but seeing what my friends ate at Kindred Fare the same night had me jealous.
