Green Bean and Freekeh salad with minty tahini dressing

A friend made this for us a few months back, so I decided to give it a try:


Some comments:

–If you can’t find the freekeh grain, try another small grain instead. If you use freekeh, use 2X the amount specified in the recipe.

–The dressing comes out VERY thick per the recipe. I found that I had to whisk in several additional spoons of water to thin it out to the
point that it would easily coat the salad. Even with whisk in more water, the dressing is very flavorful.
