WATERMELON with GOAT CHEESE and MINT

As we have a heatwave in Berlin, here again a classic cold dish from my recipe collection. I also would recommend it as a starter, such fresh&sublime and easy to make.

I like it with mint, like you have it. Sometimes I will substitute the mint with a few drops of aged balsamic vinegar.

Aceto Balsamico, interesting. I will try it. But only aged good quality Aceto Balsamico.

Balsamic and watermelon work very well together. I’d be inclined to do it and the mint.
