Hawaiian Monchong Recipes?

My local fish market swears Monchong has been a customer favorite over the past couple weeks, so I decided to pick some up to cook for Mother’s Day tomorrow. He suggested grilling due to high oil content, which I can certainly do with some olive oil, S&P and lemon. When I look online, there are very few recipes for grilled Monchong.

Has anyone ever made this fish before? Any suggestions?

It seems it is a variety of pomfret. That name might give you better search results for recipes.
I’ve usually had it simply prepared, either grilled or fried.

One if my favorite fish. Grilled with blackening spices is how I always get it at the Hanalei Dolphin.
