you can use a mix of monkfish, squid, scallops and shrimp. Just a little bit from each. And I would use instead of fresh tomatoes, 400g tinned tomato pulpo or tinned Roma tomato.

We have a local restaurant that makes a seafood medley like this with the addition of white northern beans, hearty for winter time

YES, you poach the seafood in the tomato liquid. Don´t forget to halve the scallops or cut the monkfish in little pieces.
