Bras hands back Michelin stars

Wow. That will reverberate indeed. But good for him. If he doesn’t want to run that race, don’t do it. Food is such a passionate thing. If your passion doesn’t run there, it will just wear you down. Put the energy into cooking the way you want to do it. Everyone benefits more from it then.

Very interesting. Can a restaurant stop Michelin from reviewing them and publishing it? Certainly Michelin could honor the request but do they have to?

Good for him and his passion.

We met the guy 3 weeks ago and he was very quiet, almost shy, soft-spoken, and yet friendly and accommodating. Our wait staff offered to show us the kitchen and Sebastien quickly got off his duty to meet us. His restaurant, looking like a James Bond arch-villain lair in the middle of nowhere in Aveyron, had all the decor, looks and staff of a snobby, stuffy 3-star restaurant. Well, looks aside, the staff were very friendly and engaging without being intrusive nor patronizing. Very patient with quietly and politely explaining the dishes and wines. Looks like Sebastien’s mannerisms rubbed off on his staff. Wonderful experience. Great, great food!

Why not? Just kick them out when they arrive, I guess. Not sure that is the best way to do things but his restaurant-his rules.

Michelin inspectors are anonymous. Though I am sure it is far from perfect they work very diligently at this. You would potentially risk kicking out real customers if you guess wrong.
