PACCHERI with GUANCIALE & RICOTTA

I am a big fan of Guanciale. I know it is not easy to find, instead use Lardo. But normal bacon I would not recommend. Also the form of the pasta is important, my new favorite Paccheri. In addition I used sheep Ricotta which has more flavor than the regular cow Ricotta.
