Breakfast looks great!

Dinner was fried catfish (using Sean Brock’s Jimmy Red cornbread mix) and beans (cooked in homemade stock with smoked hocks)

I tried my hand at the Momofuko SSam Bar Brussel Sprouts. Pretty pretty good. Like any great dish, it's all about balance and I need to fine tune a bit next time.

St. Louis ribs smoked for 2 hrs over hickory and post oak, sauces with my bbq sauce + sambal. Geechie Boy Mills black eyed peas and bacon ends.

1: Celery gimlet with Glendalough Irish gin (would be a good St. Patrick's Day drink!)
2: Warm radicchio salad (hazelnut, buttermilk, chive oil, Gorgonzola)
3: Parisienne-style gnocchi with sage brown butter
4: Homemade pappardelle with walnut ragout & 75-degree sous vide egg
5: Pineapple-infused cream with vacuum compressed rum-infused pineapple

Sweet potato, spinach and shrimp skillet - delish, and 483 calories

1 TBSP EVOO
1/2 cup chopped onion
1/2 TSP red pepper flakes
1 clove minced garlic
1 Cup cubed sweet potatoes
8 oz shrimp
1 1/2 cups spinach (recipe called for kale)
Salt & pepper

The smell of this dish lingered into the next day, and was very pleasant

chili verde. Classically, if one can say that, it uses just pork shoulder but that’s fatty and I don’t like chunks of fat. So I spend an hour dicing up 2 pork shoulders and discarding about half, make the chili verde and then add diced pork tenderloin the last 20 minutes. The meat has been first sautéed with oregano, garlic, cumin, cayenne, coriander, pepper, salt. Add tenderloin too soon and it disintegrates, but it is so tender and the pork shoulder adds flavor. Fresh tomatillos and cilantro, fresh peppers, chicken broth, herbs and spices, diced Yukon gold potatoes last 30 minutes, makes a great meal for days.

Results in a lovely, fluffy omelet.

Nice, Andrew. Did you have to do it on the opposite side of the grill from the heat source? My guess is that fat flare-ups could be a major issue with duck. Pass the Pinot!

No, that’s what I used the brisket for. The fat cap added enough fat to keep things together. Still pretty lean but being careful I didn’t break any of the patties.

Edit: Did you know that brisket fat is unsaturated? Learned that from Bryan Flannery. Makes for a great binder while being more healthy than the fat in chuck.

broccoli/chicken stir fry, easy comfort food but really good

My version of chicken piccata (based on stuff in the house). It's become the favorite chicken dish in the house .

Korean short ribs with cauliflower rice and spinach. We've played with our recipe for years now and I think it's finally perfect, making good use of homemade chili juice and salted chili paste.
