Funny! I made (paleo) shrimp burgers last night too! Homemade (paleo) remoulade and served on butter lettuce in lieu of buns. Tasted great.

Eggs with fresh summer truffles this morning. First time ever trying duck breast bacon from D’Artagnan. Although the pieces are small has pretty good flavor, very salty though (even for bacon).

Spicy Coconut Mussels with Lemon Grass (NYT recipe, without the chili this time, so I guess it wasn't actually spicy)

Served it with a 2009 Merry Edwards Sauvignon Blanc, which was amazing at this age.

I deboned a fresh chicken and brined it, sprinkled the inside s/p, red pepper flakes, rosemary, fresh thyme and sage and lots of wild fennel pollen I collected today and then smoke/bbq'd it around 425 deg. Ballontine style. Oh, mama.

Not really cooked tonight, but having torshi (Persian sour mixed pickles) that have been in the reefer for 2 1/2 weeks.

Hey Brandon, thanks. I had a Qupe Bien Nacido Roussane that would have gone great, but it's still in the cooler unopened. After a long and hot day, cold beer seemed great. Alvarado St Palio Pilsner (Italian style pilsner).

I used some venison to make kibbeh for a samosa goat cheese neapolitan style pie. We actually draped the kibbeh with pancetta.

FERMENTED MUSTARD

135g Brown mustard seeds
119.5g Yellow mustard seeds
13.25g Yellow mustard powder
1/2 cup Apple cider vinegar
1/2 cup Fusion White Verjus
130g Sauerkraut juice (Wegmans fermented)
7g Salt

Grind mustard seeds in spice grinder, mix all ingredients, store 4 days at room temp in mason jar with loose lid, then fridge for few days.

Copper river salmon sandwich....toasted sourdough bread, avocado, Walla Walla sweet onion, garlic aioli with dijon mixed in, fresh spinach.

For 4th of July parties in Boston & Philly, I made homemade sausages, based on a recipe for Thüringer Rostbratwurst from Uli's Famous Sausage in Seattle. Sous vide at 158°F x 60 min, then briefly grilled. Served with buttered and toasted brioche New England-style buns, fermented brown/yellow mustard, spicy pickled red onions and spicy dill Kirby cucumbers, all homemade.
