Figured to use up the rest of the fresh dill in the fridge; so, pasta with seared scallops in a chardonnay, dill, butter, cream sauce, topped with fresh Japanese salmon roe - served with a pretty decent value-for-money 2017 Domaine Luquet Pouilly-Fuissé Cuvée Terroir.

I feel like the Pork Chops get Secondary Board Treatment, Kotowski....

Pork Chop Friday for us! I like to do chops in Bacon fat and sweet white wine. Then I go collard greens (just parboiled) and then into the pan with all the pork fat and drippings while the chops oven rest.

Try melted, rendered bacon grease/lard on a spatch-cocked chicken. Technique I learned "interning" at a BBQ place in the south ;)

Step 2: Try Rendering and Using it on everything

Found it via a post here and was impressed with some of the pricing, both on the Clos Canarelli (was our summer wine for a couple of years overseas) and some library Ridge wines (Geyserville and Lytton Springs) that we’re cheaper than current retail. Aside from that, I can’t find the Clos Canarelli in WA.

Promo piece for Bar Keeper’s Friend. I got tired of my pans looking like crap and picked up some BKF off of Amazon. Forty five minutes of scrubbing with steel wool. Sharing, as I’m guessing I’m not the only one with pans that looked like this.

Crab Cakes, yum! Crab season just opened here on the left coast although the commercial season is on hold due to the whales currently feeding off the coast. Can't wait!

Stone crab season here, but I have to confess, these were made from Phillip’s Lump crab from Costco, and the wife gets credit for everything except the fire.

This morning I made Eggs Benedict, my Hollandaise gelled up right when I was pulling the eggs off the stove. Oh well.

This is a Costco prime New York Strip.
I purchased a 3 pack that looked better than most other packs. This is the last of the three pack.
We ate one immediately and froze the other two.
As it turned out this was the most amazing New York Strips we have ever had.

Piri Piri Chicken. One of our favorite restaurants in NYC is Cervos. They don’t have a great outdoor set up so they elected to close for the winter months but operate as a market. Fresh produce, meat, seafood, etc. We want to support them as best as we can. One of their offerings is the Piri Piri chicken that’s on their menu. Solid effort.
