Hi Dave - they are generically made for all the big name Kamado manufacturers (including of course Kamado Joe). I can’t seem to get the kick ash basket website to pull up (so no idea if they’re still in business now) but there are some on amazon.

Andrew - those short ribs look beautiful, and I sure do love those thin cut (flanken style) short ribs. They’re amazing with a good teriyaki/soy based marinade and grilled hot.

Couldn’t say no to those short ribs, so made my teriyaki sauce recipe... and added a can of La Croix Cran-Razberry for the marinade. I know, sounds crazy, but it worked well, given an overnight soak. Grilled over a VERY hot direct fire, brushing with teriyaki sauce after searing/flipping. Side was Carolina Gold rice cooked in homemade stock - sticky rice would have been just as good, but I needed to use the stock.

I had a Fess Parker wagyu filet (normally don't get filet) and wanted to sous vide, but my wand broke maybe 2 years ago. My instant pot doesn't have a sous vide setting, but I put it on "Keep Warm" and the thermometer showed it pinned at 127 degrees. Vacuumed it salted with fresh rosemary and a clove of garlic, cooked in the bath for about an hour, then seared in a blazing hot cast iron pan with a little ghee. I made a sauce but the filet was so flavorful the sauce got drain poured.

Yeah, on the Plateau. Same day, I was out in Fall City and stopped by their little market... and they had plate ribs that looked exactly the same for $15 a tray. Weird to see marbles short ribs line that out of the blue in multiple places, but then cut as plate ribs?!? I don’t have any room in the freezer, so I passed :(

Local butcher does a Hawaiian marinade for the thin cut short ribs that is the bomb.

Grilled a flank steak last night. Always fun when you’re getting a rain/snow mix and the grill is just BARELY covered. Used the board juices, butter, three garlic cloves and a cup of balsamic to make a quick reduction and then out green stuff on the plate because I’m healthy like that.

@Brandon - really just depends. Teriyaki is usually faithful in our house for flank, but I think it's great with just a dry rub. I usually make a big batch of SW rub that I've evolved from one of Tex's posts back in the day (1 salt, 1 pepper, 1 granulated garlic, 1 ancho chili, .5 mex oregano) and use it as the house rub for steak and pork chops. Depending on mood, I'll toss in a little bourbon-barrel smoked paprika.

Have slowly been focusing on developing out sauces or other toppings (i.e. chimichurri, balsamic reduction, board sauces, etc.) and will likely go back and play with APL's "spackles" in "Charred and Scruffed."
