Will the 16 EVOO last another year? Or is it less expensive than the 17 because you think it's got a shorter shelf-life? I love your EVOO, I bought a 6-pack last year, I'm just trying to decide if I should purchase the 16 or 17 this time.

In the end I decided I just don't use olive oil enough to justify a 6 pack or even a 3/3. But I'm in for some sardines!
Ripe fruit isn't necessarily a flaw.

Hi Paul, Honestly... my EVOO is so clean, it does not go rancid as some EVOO's happen to do. I am using some old oil from 2013 that I had left over and it is still good. The EU made us to put a Best if used by date on the bottles, but Olive Oil does not spoil. So IMHO, I would go with the 2016 and then reorder 2017 as soon as you're down to the last bottle. The 2017 will be very turbid when it gets here... it will be a real treat!! I am around so getting you a fresh supply is not a big deal!! flirtysmile

No... really, my house at the winery is beautiful and I love it, but it is cement and stucco with tile floors. We have heating in every room (added after it was built) and 2 fireplaces which in the winter run 24 - 7 but it is still cold... In the summer, only the master bedroom and the hallway downstairs has AC so summers are hot. Jamons do fine in the extremes!! [snort.gif]

Now space...wait until I can start bringing in the boneless, or portions, those will fit right in the frig. flirtysmile

While temp swings are a real concern (the house has been known to get hot enough to soften thick candles), I fear the humidity of the south more. It can be like living in a sauna.

While chatting with Malcolm, he mentioned the proper utensils for cutting / carving a nice Jamon. I am in the process of sourcing these and will try my best to get them Stateside before the Jamones arrive. Anyone who has purchased or is interested in buying one in the future, please send me an email so I can order the correct amount. I will personally select these in March when I am in Spain. Not planning on buying the top of the line, but they won't be the cheapest either. Equally for the knives. If you want something special ordered please let me know and I will look for it while we are there.

In for a jamon, EVOO, Sherry vinegar and some tuna.
