Grape juice clarification with flotation

I recently purchased a quite simple flotation pump for clarification of white grape juice prior to alc. fermentation. I have tried as flotation additive only gelatine (from different companies) and flotation gas, nitrogen. However, the results are not always the same and quite often i don t get high yield of clarified grape juice. So far i think that i don t have control over the process and it is a bit hit and miss. Anyone has experience with flotation?

You might want to try a pectinase.

I do. Actually i have tried different dosages and also different periods of time before addition of gelatine.

I’d suggest you’d need a co-flocculant; I’ve never had much success with gelatin alone.

Try some bentonite in the mix

When I’ve had problems with flotation it has usually been due to incorrect pump pressure or gas flow rate. Essentially it is the gas that is doing the work with the help of enzyme and flocculants to achieve a good result.
